Job Overview:

As a Pastry Chef at Accor Hotel, you will lead the pastry department and be responsible for creating a wide range of delectable desserts, pastries, and baked goods for our guests. Working closely with the culinary team, you will contribute to the development of the hotel's culinary offerings, ensuring that each creation reflects the highest standards of quality, taste, and presentation. The ideal candidate is a creative and experienced pastry chef who is passionate about crafting memorable culinary experiences.

Key Responsibilities:

  1. Menu Development:
    • Collaborate with the Executive Chef and culinary team to create and update pastry menus that align with the hotel's culinary vision.
    • Introduce innovative and seasonal items to enhance the dining experience for guests.
  2. Pastry Production:
    • Oversee the production of a variety of pastries, desserts, and baked goods, ensuring consistency and high-quality standards.
    • Manage inventory levels to minimize waste and optimize cost efficiency.
  3. Recipe Development:
    • Develop and refine recipes for pastries, taking into account flavor profiles, textures, and dietary preferences.
    • Stay updated on industry trends and incorporate new techniques and ingredients into pastry offerings.
  4. Quality Control:
    • Implement rigorous quality control measures to ensure that all pastries meet the hotel's standards for taste, texture, and presentation.
    • Conduct regular tastings and evaluations with the culinary team.
  5. Team Leadership:
    • Lead and inspire a team of pastry chefs and kitchen staff, fostering a culture of creativity, collaboration, and excellence.
    • Provide training and mentorship to develop the skills of the pastry team.
  6. Kitchen Operations:
    • Manage day-to-day kitchen operations within the pastry department, including scheduling, ordering, and maintaining hygiene and safety standards.
    • Collaborate with other kitchen departments to ensure seamless coordination.
  7. Event Collaboration:
    • Work closely with the banquet and events team to create custom pastry offerings for special events, weddings, and functions.
    • Collaborate with clients to understand their preferences and requirements.
  8. Cost Management:
    • Monitor and manage the pastry department's budget, controlling costs without compromising on quality.
    • Source ingredients efficiently and negotiate with suppliers to secure favorable terms.
  9. Presentation and Plating:
    • Ensure that all pastries are beautifully presented, paying attention to the aesthetics and visual appeal of each creation.
    • Collaborate with the culinary team to ensure a cohesive and visually pleasing overall dining experience.
  10. Customer Feedback and Adaptation:
    • Solicit and analyze guest feedback to continually improve and adapt pastry offerings.
    • Stay attuned to customer preferences and adjust the menu accordingly.

Qualifications and Skills:

  • Culinary degree or equivalent certification in pastry arts.
